Fun Way to Eat Those Healthy Carrots.

My fiancee was hungry and I had nothing in my fridge except for carrots. So I came up with this quick recipe for a fun breakfast or snack.

Serves 2

You'll need: two medium carrots, salt, bread crumbs, a bit of onion, one egg, olive oil.

Clean, peel and shred the carrots. Chop the onion. Mix together in a bowl, add salt, add egg. Mix. Preheat one table spoon of olive oil on a frying pan. When hot, place small "clump" of carrot batter onto the pan. Wait approx a minute, then flip and fry the other side. Should take about 2 minutes. Serve warm! Yum!
